Artichoke & spinach dip, comfortable comfort

Who doesn’t love a good artichoke dip? I’ve been hankering for this classic snack lately, but I wanted to create a lighter, healthier version.

This artichoke and spinach dip get’s an extra punch of protein from a handful of pepitas and some probiotic Farmer’s Cheese.

I feel like we’ve all be hankering for familiar comfort food lately. The main issue I have with most comfort foods is that they end up leaving me feeling pretty uncomfortable. I’ve been working my way through some of the classics and making some cleaned-up comfort dishes. Artichoke and spinach dip is a classic, but generally pretty heavy. My version is made with healthy, real ingredients without being short on flavor. Perfect on it’s own as a sauce for a grilled steak!


Artichoke and spinach dip

Ingredients

  • 1 1/¼ cup EVOO

  • 2 large artichokes, peeled, choke removed and cut into quarter

  • 1 onion, diced

  • 1 pound spinach

  • 3 cloves garlic, thinly sliced

  • ¼ cup white wine

  • 2 TBSP white wine vinegar

  • ¼ cup raw pepitas (pumpkin seeds)

  • Salt and Pepper to taste

  • 1 tsp cayenne pepper

  • Zest of 1 lemon

  • ½ cup Farmer’s Cheese

  • Mixed raw vegetables for crudité like cucumber, carrot, Summer squash, etc.

Method

1. In a large pot heat 4 TBSP of EVOO over medium-high heat and saute onions and artichokes until the artichokes for 2 minutes, then add the wine and vinegar and simmer until the artichokes are soft when pierced with a knife, about 8 minutes.

2. Add spinach and garlic and stir for 3-5 minutes until the spinach is completely wilted.

3. Remove from the heat, add pepitas, cayenne and lemon zest.

4. Transfer to Vitamix, add the Farmer’s Cheese and process on high until smooth, but still has some texture, about 1 minute.

5. Plate in a serve bowl, making a well in the middle for the remaining EVOO. Serve with raw veggies and crackers.
