It’s amazing how having a few prepped ingredients in the fridge can make a healthy meal super easy and quick to put together.
With some garbanzos cooked in the pressure cooker and folding in a few other ingredients, this dish comes together in a few minutes!

Lately I’ve been keeping a rotating stock of cooked beans in the fridge for quick stews, salads and side dishes. This hearty dish comes together super quickly and folding in a dollop of farm cheese adds luxurious creaminess, probiotics and protein.
I’ve been really into North African flavors lately and this dish is a simple way to cook outside of your comfort zone and integrate new flavor profiles. It makes a perfect hearty breakfast or an easy, quick lunch.
Garbanzos with Farmer’s cheese and a 7 minute egg
Ingredients
1 1/2 cups cooked garbanzos
½ cup Farmer’s cheese
1 clove garlic, sliced
2 TBSP EVOO
Small handful of kale, torn up
1 TBSP tomato concentrate
Sea salt
½ tsp harissa powder
½ tsp cumin
Fresh cilantro
2 eggs, cooked for 7 minutes and shocked in an ice-bath
Method
1. In a medium sauce pot, heat the olive oil over medium low heat and add the garlic to sweat for 2 minutes.
2. Add the kale, wilt briefly then add the garbanzos, tomato concentrate, cumin and harissa and heat through, about 4 minutes, then fold in the Farmer’s Cheese.
3. Meanwhile, bring a pot of water to a boil and add in the eggs. Set a timer for 7 minutes and prepare an ice-bath. Shock and peel the eggs.
4. Plate the garbanzos in the bottom of a bowl, top with an egg cut in half and finish with sea salt and fresh cilantro.
